Butchery is a Rift profession that involves skinning animal hides. The hides are then made into leather at a loom. The Butchery profession goes well with several crafts including recipe materials for Outfitting, Armorsmithing and Apothecary. Check out Rift Outfitter Guide, Rift Armorsmith Guide, and Rift Apothecary Guide here.
To skin an animal you do not need to have a tool or knife in your inventory. Simply right click the animal to butcher it and get the hide.
If you've got the cash, you can buy raw leather from the auction house from other players. Simply go to a loom and start making the leather to get skill ups.
Be sure to save items looted from animals such as rotting canines or cracked ribs to sell in the Auction House. Many are used for recipes purchased with daily crafting quest tokens.
